I saw yesterday a great way of making pickles. Egyptians love pickles so here is how to do it BUT with LESS salt!!
Put litre of vinegar and litre of water into a pan with 2 tablespoons of salt.
Bring to boil and drop in chopped aubergine or carrots, radish, cucumbers etc and cook for 4 mins to kill bacteria.
Then in a bowl put a cup of sunflower and a cup of olive oil, some dried herbs you like, a few cloves of boiled garlic, teasp salt, black pepper, few chopped chillies.
Then after 4 mins lift veggies out of the vinegar pan and drop hot into the oil bowl and mush around coating everything.
Then put it into sterile jars and top up to top covering the veg with oil to stop air getting at veggies. Try tipping it back and forth to remove any air pockets.
You can sterilize old jam jars by boiling them and the caps in water for 10 mins.
